Incö, today. A Ladin word that is also used in the lowlands. A word that has a very noble derivation from Latin: hinc hodie, which means today. Incö is the name we have given to a special table in the Weinstube at La Stüa de Michil.
Mother Nature's guardian angel
Incö is the brainchild of Simone Cantafio and his team at La Stüa de Michil and represents the desire to offer our guests what we now consider to be the ultimate expression of matter beyond the clichés of haute cuisine. Matter that, in the hands of farmer friends, true guardian angels of Mother Nature, becomes an expression of genuine flavour, linked to the roots of a centuries-old culture in danger of extinction. They are the ones who bring us what they have every day. And we do something with what they have.

Incö's menu consists only of what our friends bring us in the morning and serve us in the evening. Just like our grandmothers used to do.
A dinner in three acts
To enjoy the Incö experience and savour a unique menu that varies from evening to evening as the products are selected Incö, in other words on the same day, it is necessary to book the Weinstube at least twenty-four hours in advance. During the evening, chef Simone Cantafio and his team present and serve the menu in three acts: Italian antipasti, the dish to share and the desserts.

Good to know
The table in the wine bar seats a minimum of two and a maximum of six people. There is only one basic rule in the Weinstube: sharing.
Reservations are mandatory and must be made at least 24 hours in advance; no-shows will be charged €150.
You must arrive at 7pm, half an hour before the Stüa opens, to start the Incö experience.
When booking, it is also necessary to inform us of any allergies or intolerances, as the dinner will be prepared with the ingredients received in the morning.
The cost is €230 per person, excluding drinks.
